Baked Cinnamon Swirl Pancakes

The day I found this recipe is the day I made it, which for me is a rarity. I am very anal about how I plan out my recipes and meals. I just couldn't help but make it right away. Man alive was that a GREAT choice. The pancakes were fluffy. The cinnamon swirl is to die for. These are pretty fool-proof, seeing as how you bake them. We all gobbled them up. For special occasions, you can add a drop or two of food coloring for colored pancakes.

Recipe from Big Bear's Wife

What you need:
  • 2 cups flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 4 tbsp. sugar
  • 2 eggs
  • 2 cups milk
  • 4 tbsp. cooking oil
  • 4 tbsp. melted butter
  • 1/4 cup brown sugar
  • 1 1/2 tsp. cinnamon
  • 1 tbsp. flour
Directions:
Beat eggs together. Add milk and oil.

Mix together 2 cups flour, baking powder, salt, and sugar.

Make a well in the dry ingredients and pour in the egg mixture. Stir until well incorporated.
Line a jelly roll pan with foil and pour prepared batter onto it.

Mix together melted butter, brown sugar, cinnamon and 1 tbsp. flour. 
Place in a ziploc bag and pour onto batter.

Swirl with a knife.

Bake at 350 for 8 to 10 minutes.
Cut and serve!
