Sixteen Minute Beef & Bean Burritos

I loved these burritos - they were fast, delicious, and flavorful! I also love that they are customizable. Definitely a keeper. The recipe comes from Ree Drummond, aka The Pioneer Woman. Of all the recipes I have posted, the most recipes from one person are easily from Ree Drummond:  Homemade Chicken Strips, Italian Drip Beef, Marlboro Man's Second Favorite Sandwich, Red Velvet Cake, The Marlboro Man Sandwich, Beef Fajita Nachos, French Toast with Berry Butter, and Grilled Chicken & Pineapple Quesadillas. I watch her show each week and plan to make many many more of her amazing recipes! I'm a P-Dub fan through and through :)

Recipe from The Pioneer Woman

What you need:
  • 2 lb. ground beef
  • 1/2 onion, diced
  • Salt and pepper, to taste
  • Cumin, oregano, chili powder, and garlic, to taste
  • 1 can enchilada sauce, plus some
  • Green chilies
  • 1 can refried beans
  • Cheddar cheese
  • Tortillas
  • Toppings: guacamole, salsa, sour cream, pico de gallo, etc.
Directions:
Brown ground beef and onion. Season.
Add in sauce and green chilies and simmer over low heat.

Heat refried beans in saucepan and add cheese until it's melted.

Spread beans on each tortilla, then top with meat mixture.

Fold in ends and roll up. Drizzle with enchilada sauce and top with cheese.

Microwave until cheese is melted.
Top with sour cream, salsa, guacamole, pico de gallo, etc.
