Pasta alla Marlboro Man

If you couldn't tell by the recipe name, this is from Ree Drummond, The Pioneer Woman. It was a great, easy pasta dish - the sauce was hearty and flavorful. My husband loved it because it was nice and meaty.

What you need:
  • 2 tbsp. olive oil
  • 1/2 large onion, diced
  • 2 cloves garlic, minced
  • 2 lbs. ground beef
  • Salt and pepper, to taste
  • 1 heaping tsp. ground thyme
  • 1 (28 oz.) can whole tomatoes
  • 1/2 cup Parmesan cheese, grated, plus some
  • 1 to 2 lb. Rigatoni pasta (I used penne)
Directions:
Heat olive oil in a large skillet and cook onion until translucent.

Add garlic and stir, cooking for 1 minute.

Add ground beef and cook until browned. Drain if needed.

Season with salt, pepper, and ground thyme. Add tomatoes and stir.

Reduce heat to low and cook for 30 minutes, covered. Stir occasionally.
Uncover pot and cook for another 30 minutes.
Cook pasta according to directions and drain.
Stir in 1/4 to 1/2 cup Parmesan and serve over cooked pasta. Top with more Parmesan, if desired.
