Turkey, Broccoli, & Cheddar Grilled Cheese

I have been wanting to make these for so long. My kids pretty much only eat turkey lunch meat (sometimes chicken) and they love broccoli. So this is kind of a no-brainer for a more filling grilled cheese. Instead of buttering the bread, I put the butter in the skillet and it gave me the same result. Less hassle, less mess.

What you need:
  • 8 slices of bread
  • 1 onion, diced
  • 1 to 1 1/2 cups broccoli florets
  • 2 cloves garlic, minced
  • Turkey, shredded (I used lunch meat)
  • Cheddar cheese slices
  • Butter
  • Salt and pepper
Directions:

In a skillet, melt 1 Tbsp. butter and cook onion and broccoli and until onion is softened, 5 to 7 minutes. Add garlic and cook for one minute. 
Add turkey, season with salt and pepper, and cook until warm. Remove from skillet.

Build sandwiches: broccoli & turkey mixture topped with a piece of cheese.
Melt 2 Tbsp. butter in skillet and place 4 sandwiches directly onto butter. Cook until golden brown. 
Flip, adding 1 Tbsp. butter more, if needed. Cook until golden brown. Remove and slice to serve!
